Demerara is a type of cane sugar with a fairly large grain and a pale amber colour. It has a pleasant toffee flavour and can be used in place of brown sugar.

Demerara style sugar is used to add a delicious crunch and flavour to biscuits, muffins, crumbles and other baked goods. It’s a speciality light brown sugar, with large golden crystals that account for a rich, creamy, molasses-like flavour that enhances baked goods.
